Recipe for Today (couldn't print it, so posted it!)

Basic Muffin Recipe
With this simple recipe you can create a huge variety of different flavors and treats.
Read through the recipe first and decide what variation you might like to try.
If time allows we will be able to make the toppings.

Heat oven to 400 degrees

1 egg
1/2 cup milk
1/4 cup vegetable oil or melted shortening
1 1/2 cups flour
1/2 cup sugar
2 tsp baking powder
1/2 tsp salt

Grease muffin tin or line tin with paper liners.
In a bowl beat egg with fork, stir in milk and oil.
Measure flour by dip/level/pour method. Blend dry ingredients;
stir in just until flour is moistened. Batter should be lumpy. Do not overmix.

VARIATIONS:
Add your extra ingredients such as: (choose one, not all!) 2 mashed bananas, 1/2 cup fresh berries, 1 cup chopped apples, 1/2 cup raisins, 1/2 cup canned pumpkin, 1/2 cup chocolate chips or nuts, 1 tsp flavoring etc.
OR
Make muffin recipe except fill muffin cups half full of batter, drop teaspoonful of jelly/jam on center of batter, add more batter to fill 2/3 full. Bake as usual.
OR
Apples muffins- make muffin recipe, except blend 1/2 tsp cinnamon with dry ingredients. Add 1 cup raw grated apple with shortening. Bake 25-30 minutes.

Stir in slowly. Fill muffin cups 2/3 full. Baking 20-25 minutes or until golden brown.
Muffins will have gently rounded and pebbly tops. Loosen immediately with spatula.

Makes 12 muffins. Store in an airtight container for 2-3 days.

CONSISTENCY CHANGES -
Be aware that the more fruit you add to your recipe, the wetter or more doughy your baked product will be, and it will take longer to cook thoroughly. As a new baker, it is best to err on the side of caution and only add a little extra something to see how it works.

MUFFIN TOPPINGS -
Coffee Cake topping: mix 1/3 sugar and 1/2 tsp cinnamon...sprinkle on top of muffins prior to baking.
Streusel topping: make the above mixture but add in 4 tablespoons of cold butter and blend in until crumbly.
Glaze: Mix 1/2 cup of powdered sugar with 1 tablespoon warm water. Add 1/4 teaspoon vanilla and mix well. Drizzle over baked muffin while still warm.
Frosting: Combine 1 cup of powdered sugar, 1/2 stick of butter and 1 tablespoon warm water or warm milk, mix well until fluffy. Spread on cooled muffin.
Nutty topping: mix 1/2 cup each chopped nuts and brown sugar, sprinkle on muffin prior to baking.
